The BEST Apple Pie

Disclaimer: This is actually my dad’s recipe. But, truly, Dad knows best with this one. Also, didn’t take a picture of the cooled pie until AFTER we ate some of it. Whoops.

This apple pie is so simple – 5 ingredients – and I have never had better pie than this. It’s even made with store bought crust. I kid you not. I would love to send you the smell of this pie through the internet. But dammit, we haven’t quite mastered that one yet. In time, I suppose. In the spirit of Christmas, which is when this pie is made frequently in our family, I give you the BEST apple pie in all of it’s amazing glory.

First, you’ll want to take the pie crusts out of the fridge. They are easier to unroll when warm. And, then, pre-heat the oven to 400 degrees.

Peel and slice the apples.

I like crisp apple pie and slice the apples on the thick side. The thinner you make your apple slices, the softer the apples will get. Mine are typically 1/4 inch thick. Obviously from the photo you’ll notice I’m not great with a consistent apple slice. I’m imperfect. Deal.

Mix both types of apples together in one large bowl.

Place pie crusts into the bottom of 3 pie plates. Layer the pies first with apples. Sprinkle a generous amount of cinnamon and sugar on top of the apples. Put down another layer of apples and top again with cinnamon and sugar.

Top the pies with another crust. Cut the crusts, if necessary, to fit the pie plates. Press the edges of the top and bottom crust together. Dad presses the edges together with a fork. I use my fingers. Whatever works. Cut small slits into the top of the crusts. Place aluminum foil on top of the pies. Bake for 35-40 minutes.

Remove the foil and continue baking for 20-25 minutes until crusts are golden.
